You have created a Monster here my friend. We try to reduce our grease & oil intake within reason. The Ziploc is coated with oils from the Chips. Oils that would otherwise be on the fish crust. Baking on wire allows the bottom of the fillet to dry a bit so it's not bad. Most cooks Crust a fillet on the top only because Crusting the bottom just becomes a mess unless you fry very crispy. Very Crispy = Oily.
