A tip with mono is to soak the line overnight in water before spooling. This makes it nice and limp, and it handles like a dream. Best to remove any sticky labels first, so the glue doesn't get on the line. Mono line absorbs a bit of water, and the store line is probably dried out and stiff. The line has taken a set from the bigger diameter spool in the store, and that is why it springs off. You might just take off the spool from your reel and soak it in plain water overnight.
The second pic looks about like the right amount of line, the first looks under-filled to me.
