I just finished up a split batch of Cheddar & Pepper Jack. 2 weeks ago, I helped Skillet make a Pepper Jack/Jalapenos batch.
As for the high temp cheese, I like it, I can add enough that I don't have to buy cheese to go with the sausage. Just crackers, makes fishing clean u and packing for a trip easier.
I need to make room in my freezer, so will be making some Jerky shortly as well.
Made some BBQ Crappie wrapped in bacon last night, same way I do Walleye, but needs to change a few things. Crappie was either to "Flaky" or mushy, where Walleye holds its form and cooks into a nugget batter.
In all it was OK. Enough that the rest of them came to work with me for the sole purpose of visiting me during lunch.
