I had to carry out my civic duty to thin out the bluegill population in my friends pond. It's a tough job, but someone has to do it. I ended up catching some nice chunks on dough bait(the fish are pellet fed in there).
I filleted them out today. I then rolled the fillets in yellow mustard, and then coated them with a breading that was 50/50 flour and cornmeal, with a dash of tony chachere's cajun seasoning and a dash of garlic powder for extra flavor. I deep fried them in a cast iron skillet.
I hit them with a dash of crystal louisiana hot sauce and plated them with some grits and okra. Not a bad meal at all.....

I love mustard on my fish! I saw my father in law dipping his fish in mustard when I was just dating my wife. I have used mustard ever since.

better than egg wash for sure and how I like to roll. I am catching a lot of crappie and given catfish all the time to eat plus catching tons of green sunfish at LSL but don't have a realiable farm pond for BG anymore. Really miss that. Good for you!
You did good!! Sometimes I fix fish, grits, and fried eggs. And when cooking grits ignore the instructions - cook and stir several minutes longer than the container says.

Yeah man, that's some good eating right there! I had a friend from Lake Charles that turned me on to the same recipe, minus the garlic. When he took fish out of fryer, he would put the cooked fish in a paper sack with a hand full of thinly sliced sweet onion. The fish would stay hot and surprisingly still crispy. The onions would steam just enough to be tender and oh so delicious! Gotta hand it to the Cajuns, they sure can cook up some good vittles!

Yep they sure can...I get some every time the wife comes in off the road. About every two weeks. She's a reginal freight relocator...lol. Love me some Turkey wing, or neck Gumbo, Redd beans and Rice, of coarse theirs some homemade Andouille sausage in their too....oooooooii, dat some good eatin' rite dere...
