I put no more than what is legally allowed in one bucket. In Alabama that's 50 bluegill. Currently I have about 20 bluegill or so. I won't add any more until I use these up. Mainly because I don't want to haul around too heavy a bucket.
Reckon how one of those would be if you rinsed it off and cooked it?
I lived in south AL for about 10 years. There was a little cafe in a community called Glenwood (if my memory is correct) that cooked up a breakfast on Saturday mornings of salt fish, biscuits and gravy. I never ate the breakfast there, but lots of folks did.

We use the Gills alive . Flatheads like live bait better but Blues and Channels will bite live ones fine too .
The problem is time. I don't have time to catch bream and fish live bluegill and catfish as well. Also I can get five or six pieces of bait off one bluegill. I'd have to catch way more bluegill if I fished live, again not enough time.
Don't get me wrong I do believe in live bait as well, but preserved cut bait allows me to get everything done ahead of time.
