I have the 4 gallon (two basket) Cajun Fryer as well. I LOVE IT!!!!!
Hard to beat the Fry Daddy or Grandpappy. I have used one for years. I have boiled peanuts and steamed oysters in it as well. Never had a problem with heating outside in the cold weather. We used the Fry Daddy in our RV and then I got the Grand Daddy for home when there are just two of us.

I went to WalMart and got a GE single basket electric, 3 quart, model. Works great! I feed 6 to 8 people very easily. Cost: $39.99

I have been using my fry daddy for over 20 years. I strain the oil and clean it and return the oil to the fryer after each use. If you use high quality oil it will last for many fryings.

I have the four gallon,two basket cajun.It is way to big to cook for 2-4 people.four gallons of oil cost a lot. I don't reuse my oil more than twice and usually discard a gallon each time.I would recommend the 1.5 gallon single basket unless you do big cookings like church or group events.
IMHO a Fry Daddy is hard to beat when cooking for a smaller group. A friend of mine that cooks a lot of fish has one of the multi-gallon fryers and it does a great job. I asked him about his fryer and mentioned that I might get one like his. He said that unless he is cooking for a larger group, he uses his Fry Daddy!
