    Corn Casserole

    1 can sweet corn, drained (you can use the southwest style corn if you want to)
    1 can cream-style corn
    1 package Jiffy corn muffin mix (you know, the one in the little blue box)
    1 cup sour cream
    1 stick butter, melted
    1 1/2 cups shredded cheddar
    Add 1 – 4 oz can of chopped green chilis and some red pepper flakes if you like it with a little KICK!
    Preheat oven to 350 degrees F.
    In a large bowl, stir together all the ingredient until well combined.
    Pour into a greased 9 by 13-inch casserole dish. Sometimes I use my glass pie pan too.
    Bake for about 30 to 40 minutes, or until golden brown and cooked through.

    Hey Scott,
    I made the corn casserole for Christmas eve dinner and it was a big hit with everyone. My 13 yr. old granddaughter loved it. Thanks for sharing.

    Cowboy Cornbread

    2 lbs hamburger
    1 cup chopped onion
    1 tsp chopped garlic
    2 cans mild Rotel
    1 can Ranch Style beans
    1 can cream style corn
    2 packages of Mexican Cornbread
    mix
    3 cups shredded cheddar cheese

    Brown 2 lbs of hamburger meat, onion and garlic and drain. Add two cans of drained Rotel tomatoes, I used the Mild Rotel and the dish was still a little spicy, and one can of Ranch style beans. Add some salt and seasoning. I used some creole seasoning. Simmer to reduce the liquid. Mix two packages of Mexican style cornbread per directions. I use the Martha White Mexican Cornbread Mix. Add a can of cream style corn to cornbread mix, toss in 1/2 of the shredded cheese and stir. Pour half of your cornbread mix in the bottom of the 9 x 13 casserole dish, pour meat mixture, top with more shredded cheese, pour remaining cornbread mix on top. Bake at 350 until cornbread is done. Around 45 to 50 minutes. It's easier to cut and remove squares from the pan after it cools some.

    QUICK OVEN SHRIMP.
    Melt a stick of ‪butter in a roasting pan. Slice one ‪‎lemon‬ and layer it on top of the butter. Put down fresh ‪‎shrimp‬, then sprinkle one pack of dried ‪‎Italian‬ seasoning. Put in the oven and bake at 350 for 15 min. Best Shrimp you will EVER taste

    Mini Peach Cobbler Recipe:
    Preheat oven to 350˚F. Ingredients: 1 cup sugar 1 cup flour 2 tsp baking powder a dash of salt 3/4 cup milk 1 stick of melted butter, brown sugar, cinnamon, 1 can diced peaches Directions: Put 1 tsp of melted butter into each regular size muffin tin. Combine the first 5 ingredients by hand… sugar, flour, baking powder, salt and milk. Put 2 tbsp of batter into each regular size muffin tin… on top of the melted butter. Then put 1 tbsp diced peaches on top of the batter. Sprinkle with brown sugar and then cinnamon. Bake the regular size muffin tins for 12 minutes. Let them cool almost completely before taking out of pan.

    Default Country Fried Steak and Gravy

    4-5 pieces of Cube Steak
    4 cups Flour
    2 eggs
    1 cup milk
    several dashes Louisiana hot sauce
    2, tablespoons each: Salt, Pepper, garlic powder mixed in a bowl
    oil for frying

    First, get your battering station set up. You'll need 2 large wide, bowls. In one, add the flour and 2 tablespoons of the spice mix. In another beat the 2 eggs, the milk and several dashes of Hot sauce.
    Sprinkle the meat on both sides with the seasoning mix, then dip into the flour to coat. Then into the Milk/egg wash, then back into the flour. once all are dredged in the flour, put on a cookie sheet and place in the fridge for about 20 minutes. This sets the crust so it won't fall off.

    Using a cast Iron Skillet, add about an inch and a half of oil, heat to 350.
    Now simply add the Cube steaks a few at a time, making sure you don't try and overload the frying pan. If you do, it'll cool the grease off to much. I try and leave about and inch and a half between all the pieces.

    Cook until golden brown and delicious on each side, maybe 5 minutes a side. Just takes practice to know when it's time to flip and time to pull out of the grease. One last thing, when you pull them out, it's important to put on paper towels or a rack to drain off the excess grease. Sprinkle each piece lightly with the spice mix.

    Gravy

    Reserve about 3 tablespoons of the grease and add in 3 Tablespoons of Flour. Stir constantly with a wire wisk for about 3-4 minutes. Add enough half milk/half water (probably about 2 or 3 cups total)_ to get it the the thickness you desire. Taste for Salt and Pepper and season to your liking

    Serve with mashed taters, biscuits and corn.

    Avocado and eggs. Spray a small shallow baking dish with Pam. Add one peeled and chopped avocado, 2 eggs, salt, pepper, garlic powder to taste. Sprinkle with chopped black olives, tiny tomatoes, prosciutto ham, onion. Preheat oven to 425 and bake for 12 minutes, remove and add shredded Italian cheese blend, place back in oven about 4 more minutes. Enjoy. Name:  ImageUploadedByTapatalk1393781149.014718.jpg

    Default Spice rubs for different kinds and cooking techniques

    BBQ Basic Rub
    ½ cup paprika
    ¼ cup kosier salt
    1/8 cup garlic powder
    2 tablespoons black pepper

    1 tablespoons white pepper
    2 tablespoons Cumin
    1 ½ tablespoons chili powder
    1/8 cup onion powder
    2 teaspoons cayenne pepper

    1 tablespoon mustard powder1 tablespoon dried oregano
    1 teaspoon dried thyme

    1/8 cup brown sugar
    This works for both Beef and Pork but for any pork, I coat all meats with Olive Oil before the run goes on then after I put this rub on I also rub the entire outside with more brown sugar

    Poultry rub
    1 Tablespoon Kosier salt
    1 Tablespoon Black Pepper
    1 Tablespoon Granulated Garlic
    1 tablespoon white sugar
    1 Tablespoon Paprika
    2 teaspoon Onion powder
    ½ teaspoon dried thyme
    ½ teaspoon cayenne pepper
    ½ teaspoon cumin


    Pork rub
    1 Tablespoon Kosier salt
    1 Tablespoon Black Pepper
    1 Tablespoon Granulated Garlic
    1 Tablespoon Paprika
    1 tablespoon white sugar
    2 teaspoon Onion powder
    2 teaspoons mustard powder
    ½ teaspoon cayenne pepper
    ½ teaspoon cumin
    ½ teaspoon Chili powder

    Beef rub
    1 Tablespoon Kosier salt
    1 Tablespoon Black Pepper
    1 Tablespoon Granulated Garlic
