Simple but labor intensive. Worth it though.

24 jalapenos, larger is good
You can cut the tops off and remove the seeds & ribs or you can cut the tops off and cut the peppers lengthwise, remove the seeds & ribs (Unless you like a lot of heat, then leave the seeds & ribs in )
Either way works. Have PLENTY ventilation!
2 tubs chive & onion cream cheese
Couple good handfuls of shredded cheddar
2 Tablespoons BBQ rub. I use Cowtown General Purpose Rub, see what your local store has
Mix the cream cheese, cheddar & rub well and fill the jalapenos with the mix. (I use a "Jerky Shooter" to fill the ones I leave whole with the tops cut off)
Any mix left over eats nice on crackers.
Wrap each one with half a slice of thin bacon and use a toothpick to secure it, may need more than one. I use thin sliced bacon so it gets done faster.
I smoke these with hickory and the smoker running about 250°F, they take an hour or two, just have to look at them now & then to see how they are doing. Generally, if the bacon is done they are done.
And you are required to have a cold beer at all times while watching a smoker. :D
Or, you can do them on a grill or in an oven.
