I will not use the oil more than three times. As for duration, I would guess I don't keep it any longer than a few months, but I've really never paid attention to that aspect.
How long do you guys keep your oil that you fry your crappie in before you replace it? When do you think it's time to replace it? Based on color? Time?

Normally, I fry, strain, place in fridge and then fry one more time before discarding. I think the longer I use it, the closer it gets to tasting burned.
I put oil in the fryer. Cook with it three times and dump.
Regular oil like Wesson and the like, no more that twice. But, peanut oil can be used over and over for some time IF you don't burn it. Did fish frys for years and used the oil for 6 months before replacing it.

usually 3 or 4 times and i use an electric fry pan with temp setting so oil wont burn 350 is best for the oil but 375 makes em sizzle better. canola and peanut oil mostly,sometimes i slow fry with low temp and olive oil but i use very little oil and only use that oil once
peanut oil, 1/2 inch deep, 8 inch frying pan, single use only. 3 min per side. stone ground corn meal and med Gene Autry's. generally there is not much oil to toss.
yup 3/4 times cooking and dump.

Question. Frying is a no-no for my and my wife's health. Is the peanut or canola oil better for our health. I usually smoke or put on a wood fire. Wife is not allowed to have fried foods.
