If you see the grease coming out you will blow the seal and it will start slinging grease on the inside of the wheel.

this would be the right way,,, buddy bearings rely on the spring pressure to keep water out, if you over fill them they will pop/blow off under pressure as the hub gets hot and the grease expands if you have a good seal, fill to 1/3 when cold, past 1/3 will not allow any place for the grease to expand to when hot,, when replacing a seal make sure you use at least a double lipped seal with spring or a triple lipped being best, good idea is to add a new seal saver ring to the axle and always use a good marine grease/"water proof" and when refilling always use the same type of the same brand, never a good idea to mix grease,, sealed up right you should never need to add grease, the zerk is not there to add grease its there to get the grease full of the right amount when repacked,, mite need some after a repacking because air pockets , shouldn't ever see grease outside of the hub

not the way to be done, pumping and allowing/pushing grease out the seal will allow/pull water into the hub when backed in to the water, drive to the ramp the grease will expand with heat then when the hub is immersed in water the hub cools rapidly sucking water into the hub, never do you want a blown seal
