I was wondering how many different colors people carry for a specific mold?

No worries ... you just confused me by referring to plastic body shapes by the term "mold".
I wouldn't even want to have to count mine !!
I have about 6 tackle boxes that have jig bodies among the other items, then there's probably several ziplock bags that have smaller bags of plastics in colors, styles, sizes, etc. that I no longer use (or never got around to using).
Suffice it to say that I've got at least 10 different brands of jig bodies, and among those brands are 2 to 5 different shapes, and among those shapes there's at least 5 to a dozen different colors or combos. Now .. I "have" them, but I don't take all of them at any one time ... but, I do take close to 50% of the total number of what I "have", on most trips.
Chartreuse, pink, purple, and blue are my mainstay colors ... and the pink, purples & blues always have chartreuse as a contrast color.

Follow up question
In your opinion what way is better fewer shapes and more color variations? Or more shapes in a few staple colors?
I would still want to cover bases as far as shape and fishing style goes carrying straight tail, tubes and paddle tails in different sizes. But as a bank fisherman carrying a lot of gear isn't always a option.
I'm with CrappiePappy. Hate to count how many different colors/combinations that are in several of my crappie satchels. I think color is more important to us than to the crappie!

I pour my own baits, I have 30 molds and have pour well over a 100 colors. Over the years I only use 6 baits and maybe 10 colors. So I only use what works lol.

I am like others, I have tons and tons of different color combinations, sizes, types, makes and models. In the end, I find myself with the same dozen or so different ones always hooked on at one time or another. Some work better in some lakes than others due to the stain in the water. Every once and awhile, some odd color combination will work for some reason or another (on that one day) and then never work again!

For me, it would be more variation in size/shape, and less color variations.
And I understand, quite well, the limitations of bank anglers, having been one for many years while in between boat ownership. It's one reason quite a lot of my "old" stock of plastics is still in their original packaging. It was much easier to cram 5 or 10 bags of plastics & a bag or two of jig heads into a small container ... than to have them separated into compartments of a larger tackle box ... and much easier to carry, plus less of a likelihood of an accident or mishap and spilling the contents all over the place.
I have gone Crappie fishing from the bank, with no more than a single color combo (blu/char tubes) and a few weedless jigheads in a pocket sized container. Then there were other times that I have lugged my two sided Plano Magnum 1152 tacklebox, with a total weight of 7lbs, and still not caught any more fish
IMHO ... your shape choices give you a good range. 1.5 to 2 inch lengths should cover you well enough on sizes. And some 1/32 & 1/16oz jigheads should give you adequate sink rates when paired with the lengths/shapes of plastics chosen. I would include a few floats, some marabou Roadrunners, and some weedless jigheads to round out your options of fishing methods.
