My sister makes her own primo bacon. She cheats a bit by using shoulder instead of side pork; so she gets a really meaty bacon. She also uses a refrigerator brine cure. A while back she got some hickory out of Oklahoma, and took it home to where she lives in Nebraska. She got a lesson that the same species from a different place may well produce a somewhat different smoke flavor.
Currently she is using local apple and that turns out real nice, but she also likes hickory in general.
