Well us older people grew up when fried fish was going to have bones in and just scaled or if catfish skinned. Lots of family gatherings for fish fries was something normal for the weekend.
For me growing up catching bluegills and frying them up always just had to watch the nones, but were so good too. Now later one when I started chasing bass we learned very fast if you cook a bass with skin on it will be oily & nasty, but filet it and not bad at all really! So for many year now we just filet most everything that is large enough.

I can fillet about any size fish pretty easily , but these days I might need to wear some reading glasses on the extra small ones

Growing up you certainly had to pick the bones out of the fish we got. It was only in my adult life that I got to be more proficient with a fillet knife.

Only fish I have caught lately was on sale at the local supermarket
