Well us older people grew up when fried fish was going to have bones in and just scaled or if catfish skinned. Lots of family gatherings for fish fries was something normal for the weekend.
For me growing up catching bluegills and frying them up always just had to watch the nones, but were so good too. Now later one when I started chasing bass we learned very fast if you cook a bass with skin on it will be oily & nasty, but filet it and not bad at all really! So for many year now we just filet most everything that is large enough.

I can fillet about any size fish pretty easily , but these days I might need to wear some reading glasses on the extra small ones
