Put the yellow bass on ice and firm them up before cleaning them. I usually coat them with a cornmeal batter that I have added salt, pepper, garlic powder and paprika. Sometimes I egg wash them and sometimes I don’t. Grin. Either deep fry or pan fry about two minutes on each side or to the brown and crispness that you favor.
