I had the sutures taken out of my finger this morning and cleared for fishing and since I gave all my crappie away and most of the bass 3 weeks ago to my grandkids in Louisiana, I will be keeping crappie for a couple of trips or so.
In the meantime, I have had to resort to my second favorite thing to do and that is bake. After I got home from the Dr appointment, I made for the first time, a Honey Mango pie and it is better than any peach pie or cobbler that I have ever had and I have had a lot. Grin.
It is made with local honey instead of the sugar that is called for in the recipe. It may be the best thing I have ever baked. The taste is incredible.

2 pie crusts 9”. I sliced and peeled 5 mangos. 3 tbsp cornstarch, 2 tsp lemon juice, 1 tsp cinnamon, 2 tbsp butter on top of filling and about 3 tbsp honey. Put slits in top crust for venting. Bake 400 degrees ~45 minutes. Place a shield over edges of crust about 20 minutes into baking. Cool on wire rack then try not to over eat. Lolol.
