    Default Grandpa Jeb's Meatloaf Sandwich

    2# ground chuck
    1 cup oats
    4.5 oz can chopped green chillies
    1/2 cup milk
    1/2 cup minced onion
    2 eggs
    1 tsp salt
    2 tsp chilli powder
    Blend well
    Bake in loaf pan at 350* for 1.5 hours.

    Slice and serve on sourdough or similar bread.
    We added a slice of cheese and slice of onion.
    Catsup isn't bad either since none in recipe.

    If you guys aren't familar with Jim Casada, google Jim Casada Newsletter.He writes a monthly blog about life in the Smokey Mountains and shares stories and recipes from his boyhood. He has won numerous literary awards and is being inducted into the Fly Fishing Hall of Fame at the Fly Fishing Museum in Bryson City NC. This recipe was in his November newsletter.
