    So....how do you guys cook your stripers? I have filleted and removed the red meat and tried on the grill, in the oven, and just good old battering with salted meal and frying in grease like I do my crappie. The only way Ive gotten ANY taste from the striper fillets is by adding garlic salt, and that's just to taste something....mainly the salt. You would think that striper meat would be a strong taste but Ive found them to be so mild there's hardly any taste.

    What do you guys do when preparing them for table fare?!?

    I soak mine in Texas Pete over night. Then just salt, batter with House Autry seafood breaker and deep fry. The Texas Pete gives the fish a different flavor. However if you like it spicy you'll have to put more Texas Pete on when you eat it. Deep drying the fish removes all of the spiciness and just leaves the flavor. I've had people that really don't care for fish but they eat it when I cook it like this.

    I will cook them on a griddle with butter and lemon pepper or a healthy sprinkling of Cajun seasoning, I clean them exactly as you describe and have had many compliments about them being good and “not real fishy tasting “

    Remove the bloodline always and I use lemon or lime juice to soak nuggets in for about 15 minutes then salt and pepper, I also use Cajun seasoning. Put them in House Autry and deep dry or put them in oven and bake until golden brown.
