What was the recipe you did with those mallards? Looked good uncooked, I can only imagine what it tasted like. I put some goose on this morning in a crock before I left for work.
As recipes go, add a little this and that to suit.....so here is my sons recipe:
Whole ducks
1 bag large carrots
1 large red onion quartered
1 white onion quartered
1 bunch celery stalks
6 cloves garlic
1 lb. mushrooms
Fresh Rosemary
Fresh Thyme
1 Fuji apple sliced
1 orange
Sticks 2 sprigs rosemary and thyme, 1 clove garlic, some onion, quarter of orange and slices of apple into cavity of each duck with butter.
In crock or roster pan line bottom with carrots, celery, onion and mushrooms, put remaining rosemary, thyme, garlic and butter with 8 ounces stock or broth.
Place ducks on top of bed of vegetables and cook 6-8 hours in a crock pot until internal temperature is 180. If using a roaster 220 degrees for 6-8 hours, baste periodically......let set 10 minutes and enjoy!
