Jalepeno Crappie
You can take fresh Jalepenos and slice them into circles, dip them in your milk/egg mixture, then your choice of breading, fry them up first. Some of the juice and seeds will give a slight flavor to the Crappie when you dip it. It makes for a decent side and gives the Crappie a slight kick.

Anything with Jalepenos is going to be a favorite of mine. Blacken, grill or fried crappie with poppers on the side. Here's the recipe for the poppers.
Split the jalepenos in half long-ways. Using a small pairing knife, core out the fiber and seeds. Fill the jalepeno boat with cream cheese, wrap with smoked bacon, season each popper with any Mexican style seasoning mix or make your own (recipe below), bake on a broiling pan at 325 for about 30 minutes or until bacon is done as desired.
Mexican Seasoning: equal amounts (say a teaspoon each) of salt, pepper, cumin, paprika, chilli powder or red pepper then add a total equal amount (say 5 teaspoons) of Accent (the flavor enhancing MSG).

Crappie fillets sprinkled with ground red pepper rolled in meal mixture . These fried with the ground red pepper on them are good , just don't stump your toe while adding it ! :eek: It makes them little spicy, but good. Anyone eating as many crappie as we do look for changes in the recipie.:D I'll have to try the jalapeno recipie for sure.
I bake a lot of Crappie with lemon ,butter ,and seasonings ( salt, pepper, garlic, or whatever ) . Maybe we need to publish a Crappie Cook Book for the Forum ?;)
