FB, you are fast. First post on the new forum. Hmmm I don't see a recipe for Crappie in this post though.
I'll add Charger440's suggestion though:
Roll'm in cornmeal and throw'm in grease!

Ed, dont forget to season them with a little garlic powder and mix a little flour in the cornmeal.
I love Toms aka Canepoles recipe, slap the fillet in mustard, then shake em in whatever regular coating you use then fry. Those things are so much more crispy and the taste is great.
I cook mine much the same, Big J, only I cut them into 2x2 inch nuggets, add mustard and LA meal mix and fry fast at 400 degrees.....mmmm-mmm and they are as you said, crispy and delicious!!
Most all the time..
Dry my filets with paper towel and roll in House Of Autry seafood breader....drop in hot grease.
I make my own slaw..
shred cabbage
add sugar til sweet
vinegar til tart
salt
pepper
Then of course the huspuppies.. I like the kind with a little onion in em.
try dipping them in Ranch dressing then batter them up....MIKEY LIKEY

PanKo oriental bread crumbs. Once you have seen em you will be able to find them under different names and if you happen to be at an Oriental Market they can sometimes be found dirt cheap.
Pat your fillets dry, dip em in egg wash, and roll em in PanKo. I mix a little onion, garlic powder, etc... in with it. Fry em like usual.
