They've been thawed & soaking in the fridge for roughly 18 hours now -- I thawed WAY too many fillets for my first fish fry. Can I re-freeze them? What's left is mostly striper.

As long as they have been in the fridge yes they can
Yes,If it's been cured in a salt brine solution, or if the temp is colder than 40 degrees.Otherwise...it's best to eat them right away.
As CRAPPIEMAGNET said if they were soaked in salt brine they should be fine. I soak all my fillets in a salt water solution because it keeps the meat firm after it is thawed and also extends the time that the fish can remain frozen and still be good.
I'm SURe the local grocery story will re-freeze foods many times over....But the quality will lower some each time you freeze it. The cell walls expand and bursts everytime the meat is frozen...Thereby letting all the "natural water" out oeverytime you unfreeze...
Dang.............. too far, I'm sure if you would have said something sooner there would have been plenty of volunteers to help you "dispose" of those fillets and you would not have to worry about re-freezing them:D

Quality may be bad if you do.
If you go ahead an fry them up, you can freeze them with better results. I do that sometimes if I thaw too many. We'll do a quick thaw/reheat of the cooked fish in the microwave, then crisp them up in the toaster oven. Makes a good sandwich. - Roberta
