This was the Time of the year Grandmaw loved... You Grandmaws Pet ---- I Raked Leaves and picked up Pecans, Cracked and Picked them out for Her... She was old school according to Kids today. Some of the Holidays needed Cakes, Pies, Candies. and lots were headed to the Church... I was always glad to help because I got to Lick the Bowl or Beaters, Scrape out the Crumbs and Lick the Spoon. She only made Taffey Once,, Work you to death to make the stuff --- She Did not Have a Candy Thermometer - And the Drop test in Cold Water for Soft or Hard Boil was when it was Ready ----- All Her Baking was from Scratch ,, With what She had from the Farm.. From the Cow she Milked and Butter we churned or Eggs from her Chickens... Divinity the weather had to be right but Chocolate Fudge was always Certain and in Everyones Christmas from Her...

Today I got out the Wifes Candy Thermometer --- and while Cooking Some Great Northern Beans and Cornbread and Whipped up a batch of Fudge. The Temp was 2 Degrees above Soft Boil when I did the rest of the directions and added some chopped Pecans.... when it is Boiling you dont stirr it till it is cool enough to pour in the pan to cool and cut to enjoy ---- Old School always worked ,, but Today my fudge did not set because a Drop test would have told me the Tool I used would have Failed the Test, and My Fudge would have Been Just Like Grandmaw use to make ... I got to dig it out with a Spoon and keep it in the Ice Box.
