    Wanted to share a recipe i used for the Big Redfish my boy caught at the beach. Pics are here http://archer7282.wordpress.com/2014...first-redfish/

    I was a little concerned about cooking this fish up, I knew i would enjoy whatever i made out of it... But i wanted to make sure that my boy enjoyed it as well (to get him more into fishing)

    I settled on this recipe as many people commented that when doing it this way the fish took the texture of chicken (which he loves) and had no fishy taste at all.

    Redfish Taco's

    Marinade 1 - 2 lbs of 1" chunked redfish (make sure you completely removed blood line and any red meat) in a mixture of the following.

    2 tablespoons mayo
    2 teaspoons sirachia sauce
    1 teaspoon garlic powder
    1 teaspoon onion powder
    sprinkle of red pepper flakes (i skipped this so it wouldn't be to hot for the kid)
    1 tablespoon apple cider vinegar

    Let fish marinade for at least 1-2 hours with overnight being preferred.

    Saute some thinly chopped yellow / red / green bell pepper, and yellow onion slices. When tender add in fish on med high heat, cook until done (usually 5 min or so with pan covered)

    If you want it taco style place on flour / corn tortilla and accompany with lettuce, guacamole, some sour cream and your favorite hot sauce.

    I chose to go taco less style... but it was still mighty tasty!

    Dubard's dewberry (blackberry) Cobbler

    Fruit Filling
    1 Cup Sugar
    1 to 1.5 TBSP Corn starch
    1 Cup Water
    3 Cups berries

    Mix sugar and corn starch together in a pot on stove. Gradually add water. Turn fire on. Bring to a boil; boil one minute stirring constantly. Then add berries. Turn fire off.


    Dough
    1 Cup Flour
    2 1/3 TBSP Sugar
    1 1/2 tsps. baking powder
    1/4 to 1/2 tsps. salt

    3 TBSP oil
    1/2 cup milk
    Mix all dry dough ingredients and then sift. Add 3 TBSP oil or shortening. Use fork to mix oil with other ingredients. Stir in 1/2 cup milk.


    Use a 1 1/2 quart baking dish sprayed with pam. Pour fruit filling into baking dish. Drop spoonful's of the dough on top of the hot fruit filling. Drop pats of butter on top of dough and filling and sprinkle with cinnamon.


    Bake at 400 degrees for approximately 25 minutes.

    ENJOY! Goes GREAT with vanilla ice cream!!!

    I have some Reds in the freezer I caught back in the fall. Usually blacken them but I might try this

    Not sure if this was meant for this post.....If you are talking about fish, this is definitely NOT the post! Don't think it would make a good fish Cobbler! lol
    But if you are NOT talking about fish........then the following is true.

    Works with just about any berry. May have to use more sugar if the berries aren't naturally sweet. I made some in Alaska last summer when we went up there. I used strawberries from wally world and it was good but not as sweet as I like it. Let us know how yours comes out.

    Dwayne, interesting about the amount of water used in your recipe. We don't use water in ours because the berries are so juicy, but will sure try your recipe. Thanks again.

    Randy, I am guessing the water is to dissolve the sugar and corn startch. I have never tried it without the water but may give it a shot. Thanks
