I'm interested in this as well. We vacuum seal all our meat we buy, but I've never tried it with crappie. I've done it with store bought Tuna and Salmon and those were fine. I'll try it next time I bring some crappie home.
I usually just put my pieces in a gallon freezer ziplock filled with water.
However, am wondering.... do any of you use a vacuum sealer and just put a handful in a sealer bag and run the machine? Wondering if I can do this without adding water, like we do with steaks, and just vacuum seal the filets and not have to worry about all the water when thawing?
Thoughts?

Everyone has their own method, but if I vacuum seal, I will lay the fresh fillets on a cookie sheet and stick the in the freezer for an hour or so until they get a good ice glaze. Then I will vacuum seal as many as I want in a bag. It’s convenient because you can get them out of the freezer, remove the amount of fillets from the bag and reseal and freeze the rest

I put fillets in vacuum bags and set in the freezer unsealed. Let them freeze up for a couple hours or overnight. Then I vacuum seal them and store them. I have eaten ones that are up to 10 months later and still great. I've always read that they will keep 24 months. Never last that long around here....I like the vacuum sealer as a space saver for freezer space.

Been doing it for years and never had a problem. That said, not all vacuum sealers are equal. AAMOF, not all FoodSaver brand vacuum sealers are equal, either!! The first one we had (Don't remember the model # but it cost >$200 and I know they don't make it anymore) was awesome and we freakin' wore it out! Bought a second one off Amazon for like $69 and....while it works (okay..."worked") good for a while, lately it's missing on the seals and it just didn't have all the bells and whistles of that first one, which I though would be overkill but now I find I really miss them! So...I'll be in the market for another one here soon. I like the flash-freezing thing, too, but....I don't think to do it very often.
Here's a Joedog special with a bunch of writing??? He's getting pretty good at the sealer thing and wore the first one out freezing my fish!
His vacuum sealer would still look like brand new if doing his own!
