Wish I had taken a pic of cleaned fish. Just as white as a crappie and they fry up delicious. Little more work but nothing once you get the fillet off with a electric knife that a nice sharp hand held cannot fix. I fillet them just like crappie turn them over to expose the red meat cut a little above and below the center line then run a sharp knife thru the red and end up with a nice fillet from the top side of the fish and a triangle small piece from behind the rib section. Fry all the small pieces together and have fish tacos. Package of taco seasoning mixed with small amount of corn meal. Tomato peste on top of fish. Put in small tortilla fried in oil oh man gonna have some on Monday.

sounds like a great meal! love it when you get a tip on the water and start wacking them. As I always say, never hurts to ask and so many just won't! Fisherfolk love to help out their fellows.

Here’s how I clean then. I take a gallon plastic bucket. Drill 3/4 to 1 inch holes all around the top. Fill it with water and place the hose in the bucket. As I fillet them throw em in the bucket. They tumble clean and white. Tastes great.
