I had a conversation with a friend of mine a few weeks ago in relation to what we call "Undesirables".

I found it funny that, what we consider as unwanted or undesirable fish, people in other states love them and cannot get enough of them. His comment was actually a pretty good analogy: We are blessed with some of the best tasting fresh water fish in the united states, although the others are good on their own, they do not compare to what we are blessed with catching. So you cannot compare sheep (Freshwater drum), white bass, catfish, or other to our walleye, salmon, steelhead, and perch species. On their own they might be good, but, we "target" one or two particular species and the rest of them are just non target fish.

I've always wanted to try sheephead as I have heard they are similar to mullet but... when you are catching walleye and planning on a fish fry, we simply don't keep them because we are not fishing for them. In other parts of the US, they love the heck out of white bass, sheep, and other fish. We are lucky to be able to go out and catch 100 white bass like they are going out of style. Most don't eat them. Not because they are not good, but because they just don't hold a candle to the bounty of other fish we have out there.
