Disclaimer time..... Your fish is your fish filet it how you see fit, my comment is my comment.....
in the end it is what it is , it may take me a bit longer than an electric ,possibly twice as long or more on my fastest days , but in the end it is really about the method to my madness and my appreciation for the wildlife I harvest .
you will likely never see me with a limit for myself and others I share with , so speed on preparation for the table is not really in play with me .

Especially the sound the knife makes coming down the rib bones.
I was surprised you Coupl hear that on the video.

I doubt using a electric knife is that much faster since you still have to cut the ribs out after fileting.....
I limit around 4 times a month and I still filet with maximizing my fish.....I like looking through the ribs and boost my pride in my work..... Makes for some GOOD LOOKN FILETS too.....

I just cut the heads off and pull the guts. Then into the grease, scales, fins. Those scales will get in your teeth, so i just take them out!
I would agree with you, but then we would both be WRONG !!!!

I think you can use an electric knife and still respect the fish. For example, I use an electric knife, cut through the ribs, save those in a bag by themselves, put the boneless filets in another bag, and then cut the head off and the skin and save the back and tail for my dad. He loves the bony parts. I don’t throw anything away except the guts, head, and skin.
