Great job Ketch. And you can share, I sent it to you just because. I do like the Smiths Knives, extremely sharp, yep have to be careful.
Go to restaurant supply store, buy victorinox flexible boning knife, profit?

Catch and release, into grease!
my billy bay 2.99 fillet knife is the best i ever held or used to date in over 50 years
i used it once and went right back and bought 4 more , i gave one to SK and i have 2 brand new ones in my garage .
its about all that as a blade for filleting and have used to debone deer a bit as well .
its a bit too flexible for deboning in my opinion ,but its edge is really stupid sharp and dont fade ....
i know it aint american made to the best of my knowledge , but the steel is just a marvel to work with .
its under the slab sticker , i went head to head with them ,to see if the sticker would compare to the best .
the slab sticker held its own in the side by side testing

Your execution of knife skills around the ribs is slick. I'm requesting you post of a short video to show how you're doing it.
Also if I can push my luck, will it work with a electric knife? Thanks.........
