Is there a market for these fish. Are they good table fare?

Basic answer to your questions is yes & yes. They're marketed for several purposes : food (human & pet), fertilizer, concrete, export food. As for table fare ... I've eaten them & they're not that bad, but I wouldn't ask for them in a upscale restaurant

Yes, a lot of them are frozen and shipped to China. As stated, they are used in pet food as well. They are said to be very good table fare (but have odd bone structure compared to normal tablefare. You aren't going to get big boneless filets like gamefish.

The disgusting part is that market price is pennies per pound... Like 8 cents or so. They are rough on normal gill nets. All of this makes them unattractive to most commercial fishermen.

I want to catch several and see if I can't find a way to at least get a good filet off the top of the back and send the rest to processing.

I believe you can buy Asian carp fillet packs at the Paris, Tn IGA store. Us rednecks will eat most anything from IGA or Walmart or Kroger.
