    I use Kwik Sharp crock sticks to get a decent edge, the package doesn't tell me the grit size. While filleting, I keep an EZE-Lap diamond hone stick with me to touch up the edge. It is a model M, which is medium - and I think is 600 grit. Not the sharpest edge you can get, but it does a good job with filleting. I have stones and can get a very fine edge when I want, but I've grown lazy over the years and the crock sticks do a good job quickly.

    I use a Ark. stone , both Soft and hard . We have a rule in our house that no knife gets put in a sink . Good way to get a serious cut .

    ^^^^The worksharp is easy to use....I even have sharp knives now...

    Do you know if elec fillet knives can be drug across a graywhetstone with a any success?

    I sharped my blades with stones and oil. I sharpen until I can cut the hair off my arm with little effort.

    For the most part I use a steel. If I feel I need to, I will use a diamond sharpener then hone with the steel.

    Yes, I engage my knife and drag it across the stone a couple of times each side. Don't worry about the valleys. Been doing it for years. Don't have to do
    it often.

    I just use one of two sharpener's I have. A Smith and a Lansky. Both simply pull along the edge. No clue how many scrapes it actually takes but when I'm done I drag them over a steel. My only concern is that my knives cut!

    I watched dad with his two sided oil stone growing up. In the service we had an oil bath three stone set up with a hard plastic base that had a holder for the part that held the stones. In the base was a trough the stones sat in. One could take a very dull knife and have it surgical sharp in just a very little bit, then hit it a lick or two on a steel...I can attest to one extremely sharp knife. I still have a very prominent scare on my little finger where it was cut to the bone...
