How many filets can be in a single bag? What's a good brand?
I have used the vacuum sealer for so many years I cant remember. Only problem I've ever had was if I stacked to much on top of each other or if something in freezer had rubbed a hole in the bag of fish and air got to it, would ruin the contents. I've had that happen but it is rare to happen. Other than that like others have said it is the way to go.
I also partial freeze the fish on cookie sheets covered in wax paper, just to firm them up , helps to get all the air out

I use foodsaver, and the size bag I make is depending on how many fish I want for the wife and I. eyes will be fewer, crappie more. All depends on what yopu want. I have always been able to put what I wanted in the bag, I make my own bags out of the roll size I buy so that makes it easier.

I use to freeze in water but seen several articles about how the water changes the fish texture and flavor some and then the extra moisture in the fish after thawing boils out while frying and can cause a couple problems with the breading etc. So what the heck I tried it and I think it is a little bit better.
I switched to just soaking the fillets in salt water for about fifteen minutes and then drain them off. I just wrap them in regular freezer paper and tape all the seams (duct tape works even better than freezer tape.) If I think they may set for a year or so I double wrap them.Write the date and fish type on the package.They lay out nice and flat and stack good in the freezer.
