Heard on news last night and this morning of LDWF confirming existence of Northern Snakehead in Old River Minorca, which is in Concordia Parish. If it's here, it's in other live oxbows of the state. We just thought we had a problem with Asian carp. What else!!??

Some people do eat them, on a Florida Snakehead website they share recipes. Must be some hungry folks or a little more redneck than I am.

You will swear this is lump crab meat!
Filet the snakehead (not over 3lbs). Cut into 1/2" square by 1" long pieces. Boil in 2 quarts of water with 1 TBSP of Zatarain's liquid crab boil for 2 minutes. Immediately drain, dry (on a paper towel) and chill in the fridge. Use as you would lump crab meat.
BTW... I'm 83 and have trouble fishing. If you catch more of these than you need, I'd appreciate one. I'll drive anywhere is the state to pick it up.
