I have 3 quart baggies of jowl meat and jelly roll I'll bring. The jelly roll is like the tenderloin of a deer. I cut most of it into about 1/2" steaks for grilling but it can be diced up for frying.
That would be awesome. Got my first taste of gator at last years gathering and it was tasty.

We had some year before last made by some folks from FL that we met while snowbirding in Savannah. Then we had some in TX last winter. Both were good, but it seemed like how it was prepared made the difference. I always understood Cajuns from LA do it best.

A change of mind of the food supply. Since it's such a far ride for us and we're staying at the hotel where we won't have a kitchen we've decided not to do jambalaya, instead we will supply many bags of chip and dip for the game Saturday afternoon. I hope that works.
