Leaving out of grand isle will give you more non-fishing options for food and stuff but a longer run. Venice puts you closer to tuna but there's not much there other than fishing.
Another forum that you might want to browse is Rodnreel.com. There's a big focus on LA saltwater fishing, reports from guides, etc.
Also, one of our members named Markham Dixon was running a charter down there, and anyone that has been on this forum for some time knows that he could be a freak of nature about catching fish. Good guy too. I've not been able to go fishing with him down there, but his site is here.
