With a little help I think a canoe would be just as stable as a kayak. I recently purchased a 13' Wasatch canoe and stability was foremost on my mind as I have never been in a canoe before so I chose to modify mine to make it as stable as I know it can be by adding coolers as outriggers which now serve double duty. They can hold food / drinks / personal items or use them to hold my catch and or bait.

I have an Old Town guide series canoe that I can stand in. Those two coolers should make it more stable.

Pretty neat setup. Should serve you well. Love the idea of coolers for outriggers.

A kayaks stability comes from your center of gravity because you are sitting so low. Narrow canoes with high seats are much less stable than low, wide canoes. Lastly, when you really need stability, kneel on the floor with your butt leaning on the seat. I love canoes and am not a fan of kayaks.
