    H O T……. in the movie Predator with Arnold and Jesse Ventura, the little Spanish girls says that the creature only comes during the hottest of Summers, and that this Summer it grows very hot. I keep looking out my window to see if there is a creature swinging from the trees.

    Well an update regarding the “Walmart.com PitBoss Sierra Griddle”. They picked up what was left of the box they destroyed during the delivery process, but still no word regarding a refund. Been almost a month since I bought the stupid thing and so far Walmart, PitBoss, and Fedex refuse to contact me with any sort of remedy at all. I cannot believe that they can just pretend that they are doing me some sort of favor here. Like I have asked for something way too special. They took my money, dumped a broken and busted up box in my driveway, and this remains exclusively my personal problem. I just love Walmart.

    Well I got a CharBroiler instead of a griddle and it only offered a weak flame. My boss replaced the hose with a larger fatter one, and he replaced the regulator with a large red one. Then he asked if he could borrow it to take on a cook. I obviously said yes and he was cooking a dozen ribeye steaks at a time on it. That baby flat hums now. So we agreed that in exchange for the repairs, that the rental would almost exactly match the cost, so we are even Steven. Then he added a few ribeyes to the deal and sent me home. Sweet.

    I brought it home last night and it would not work. The safety valve inside the regulator tripped. Brand new bottle of gas. So I monkeyed around and bled some gas off, and did this and that. Finally went to bed. This morning it fired up beautifully and I laid a cast iron skittle on top of one burner. It took a while to get hot, but once she did it was on. I cooked me up some of those dog dropping sausages. I think in the future I will lay the cast iron skillet on my induction cooker instead as it is probably more efficient.

    So I am excited about this upcoming holiday, as it will be the first time I have had a chance to enjoy it like most folks. For a long time I was working throughout the holiday. Three days off is like a vacation to me.

    I still have about $300 on my Lowes Gift Card, and plan to buy another Akorn komado grill with that money. Last night the Winn Dixie had frozen baby back ribs for about $9 each. I got ten of them and put them in the deep freeze. Well all but two of them, which are in the fridge tawing out for me. I love to use Chinese sauces and such on these ribs. Teriyaki is also good on ribs.

    I have stuff to make kebobs, and want to get good at making these. A great way to eat actually. The fat drips away and you got some vegetative materials mixed in there as well. The charbroiler will make short work of some kabobs. I am looking to get a set of the skewers they use in Persia. These are like flattened swords. Flat so the meat doesn’t twirl around. I can remove the cast iron broiler tops, and lay the swords across and over the flames and probably get pretty good results. I watched some videos showing how to mix hamburger meat to get the flavors right, and how to stick it to the sword to keep it attached. Gonna be so good.

    I also got some brats. I don’t know why I get these things. I get them and I eat them and then they are all gone and I can’t remember why I wanted them. I plan to charbroil them and lay them in a bun and top with sautéed onion and peppers. Oh and some cheese.

    I bought some of those chicken tenderloins. These are pretty good for her as far as eats go. I will try to make these kabob style first and learn from there. I also have some frozen shrimp and frozen scallops to experiment with. I liked the looks of adding pineapple chunks to the kabobs, and add onion and peppers to that. Then I take the trip fantastic and experiment making her one of her very favorites…..curry chicken. Yuck !. Nothing worse than curry but she loves the stuff. I hope I don’t just up and puke all in the mixing bowls or something.

    Hoping the weather will cooperate enough for me to pull off an early morning fishing trip. I want to swim those new jigs around and see if I can nab a few. This time of year fish die in my Death Well system. So I have to decide early on whether or not I want to bring some home. If they start biting really good, I put them in the cooler. Slowly and I toss them back.
    Maybe they will bite this one……

    The ribs went on the Akorn komado smoker about 30 minutes ago. Just a whisper of smoke escaping. I cleaned them, removed the membrane, slathered on yellow mustard, rubbed with rib powders and added a dash or three of Old Bay.

    With other types of smokers you get more smoke flavor but at a cost. You lose moisture. The trade off isn’t an issue with me and mine though. We like moist meats.

    I worked on my outdoor kitchen some yesterday….in the heat. I placed down 16 pavers. The 16” x 16” white ones. I dug some and smoothed out some and aligned them and am not at all satisfied. I bough 32 of them thinking that would be enough, but I see now I will need more. I will also need to pull up what I have already done and start again. There is a bit of a slope to the area and I am matching the porch slab height as well. Just need to take my time and lay everything out, do all the dirt work at one time, and then lay them down. Not try to lay each one and then try to do dirt work to get another to match.

    I plan to put a roof over this area as well. That will be simple enough, but suspect that I will have a few issues. I was thinking about what it should/could look like. I have seen them made from stone and some made from wood. I have seen them made from those concrete curb stones. I am thinking wood and tin rood.

    I want to have space enough for the CharBroiler and the Akorn to stay out there and be out of the rain. I want the roof to allow smoke to waft away and not catch fire. I want it to be quaint and unsophisticated. Something that is functional and not elegant.

    In the mean time I ordered a stainless steel equipment cart for the CarBroiler to sit upon. This will have large caster wheels and will roll where I want it. 36 x 30 and 24” tall. This will leave the surface at a good height for working with it. The cart also has raised sides to prevent the Charbroiler from slipping off the side and falling when being moved around on rough surfaces. Being stainless it will match the charbroiler and will make it look like it belongs there.

    Wife wanted some fireworks and there is a huge store right down the street. Florida’s largest display they claim. I of course went straight for the Black Cat cattails of crackers. She went for the fountains. She remembered her favorite last year was one called Mr Merlot. Sure enough she found it. The owners came over and upon discovering that we were locals, helped her select some other fountains that were better. Then he gave her the Mr Merlot for free. I told her we had a budget and we stayed within that amount. Oh she also likes shooting Roman candles and we got her some Black cat branded candles that shoot the glowing balls that then go boom. Boy her chihuahua is going to just love celebrating the fourth. The crows do not appreciate me lighting cattails off early. No sir they don’t like that at all. They get the crazy idea that I am shooting at them.

    Going to my brother’s around noon for a meal and to see Mom. His wife is a horse weirdo and they have several “pets” roaming around. Which means they have tons of flies. So you get your burger, you get some ribs, and potato salad, and you go outside to the picnic table and spend all your time chasing away flies. Swarms of them. Horse poop flies and horse poop gnats. Her children are all grown now and will be quick to tell you they hate horses. Hate them. See you can never go anywhere fun for vacation because someone has to stick around and service the horses. They escaped one time, and I watched the animals. When they came home I said do not ever ask me again. I left my house at 400 am, went there and fed, then to work, then back to feed, then home at about 10 pm. What a wonderful life that was. Yes, I hate horses, too.

    She wanted to get my wife into horses and that lasted about fifteen seconds. I said - “Oh Hell No”. No way I want to live that life. My brother has a few manly things, but most all of their extra monies go towards…… wait for it…..wait….the horses. Yup, afraid so.

    Anyways that is why I am smoking the ribs. Special request from my nephew. I plan to finish them here, wrap them in plastic wrap, chunk them into a cooler, then slip them on their grill when I get there to finish off when we get set to eat. My brother will have made homemade this and that and we will eat good. His wife is a vegetarian, so…… wait for it…..wait……he rarely gets to buy any meat. So it is always fun when I come over and he gets some meat. I of course get lots of dirty looks for providing meat, but hey that is what I do. She used to be much more accepting of me and my faults, but now she just gives me that look that says when are you leaving. Bad influence on her nature boy. Bad brother bad, when I come over he gets out of hand and will require effort to get back to where he was. Where she put him. I mean he seems to like that pretty well. They have been married long time.

    I finally got my refund from Walmart.com for the worthless griddle they sold me over a month ago. Took them a month to offer a refund. A month. What jerks they were to deal with as well. Just horrible people.

    I plan to stick with my large cast iron skillet for now and forgo a griddle. Maybe later I will get one that sits atop the charbroiler. I saw a cool griddle insert for a Weber or Big Joe. 24” ring of heavy carbon steel that sits down inside. The iron is angled to allow grease to drop down inside and not off the edges. The center has a slotted area where flame can come up through for searing and such. It looked really cool and doesn’t cost that much. “Titan Great Outdoors 24” Weber Grill Insert” Looks like it would be a great alternative to a full sized griddle.

    I didn’t go fishing at all this weekend. Thought about it but soon realized that the yahoos would be out and about. You give those people a few days off and they go nuts.

    In Japan horse is a delicacy. Just saying. I certainly would hate to know I had to feed horses now with these feed prices. Enjoy your holiday. Make sure your brother enjoys the ribs

    I forgot to snap a picture for my buddy what asked, when I pulled them. They are wrapped in foil and in a small cooler staying warm now. Maybe I will get a picture when I get there. Three hours at about 210 got them done enough to pull. Maybe even could have pulled sooner. Soaking in their own juices, and my sauces while wrapped up inside a cooler is a nice way to finish ribs. Really any meat almost. If you bake Mac & cheese……pull before ready and the noodles finish off inside a small cooler. No ice of course. The imparted heat which is stored, releases and it leaves a creamy texture to the entire thing. Yum and I don’t even like baked mac & cheese casseroles thingies. Poultry can finish in this fashion. I have learned that there is more to being a chef than just putting things to the stake and applying fire. Being delicate counts.
