now mind you this , there is a story about hunting on the horizon , when time permits I will tell it , but until that time ....
here is what I did after my thanksgiving hunt , carving can be fun if done right .
that fella bled out so well the meat had a lighter color than most deer I carve .....
bet it has some extra yummy going on for sure .
nothing like cutting real pretty steaks out of a boned out ham after ya get them back straps and tenderloins off , love it for sure

I've been vacuum packing/freezing back straps in 8"-10"pieces the last 10 or so years, and cut them up prior to use, same with roast or some times we make roast whole.
