    on a 1 to 10 score ....10.5 is my official score on him
    I actually never ate any venison that tasted better than this fresh grind we did over the weekend .
    3 lbs a pork fat to 16 lbs a venison off a mature buck .
    double ground and it is past good by a long mile .
    the burgers were so wonderfully tasty it defied imagination .
    not a hint of venison flavor though and could easily have passed for beef .
    not sure why but to be sure this batch is legendary for sure
    it might have had a hint of pecan bark flavor in the end as somehow
    a nice pc. got in under the gas burners on the grill
    just saying

    Awesome. My wife made lasagna with some of our home ground venison burger and it also was 10.5.

    my son uses pork butts he gets on sale to mix with the venison and isn't much of a hunter but he loves to process them and did ten this year. he takes half the meat so doesn't cost his friends anything and he gets lots of meat so win win. makes very good ground with good flavor for chili's and whatever. he's got the more power grinder as is too enthusiastic for my tastes as I like to steak out more of the hind's but whatever. Now I take my loins and let him have rest.

    What grinding plate did you use? 1/8 both times?
    We make lots of sausage at the farm, summer sausage, breakfast sausage, Brats, ...
    I’m going to do burger next year fo sho!

    I used the chili grind plate first pass and then the fine grind second pass .
    I put about 1 to 3 pcs ratio fat to meat when I ran the first pass .
    The I vigorously stirred the pot before the second pass
    Last time I only ground once and it need more incorporation.
    The ground meat/ hamburger this time around is absolutely stunning in its table quality
