Actually T man, I filet/skin as normal, steam, cool, and food-processor pulse for 10 seconds...MD crabcake recipe than plays its role!thumbs-up! Don't need to fry too long, as pike/pickerel have a "bouncy" bite when overcooked! Beautiful white meat!
