It appears to me that you HAD an HDS 7 gen 1 and purchased an HDS 7 Gen 2? It appears you are used to some settings (or menus) that the Gen 1 had that you do not see in the Gen 2. Is that correct?
Sometimes upgrades in technology don't always upgrade what you can/used to be able to do. In my opinion though I've had nothing but success and great things to say about Lowrance tech support. If you are having an issue, or simply cannot find out how to do something, go to their website and then Contact. Make sure you have your unit serial number. Send them an email detailing the issue or what you are trying to accomplish.
I had a setting change after an update. I contacted them at 8pm. I recieved an email back at 10:30 that same night. It detailed exactly how to accomplish what I was looking for. Remember, these guys work with these products all the time. Their job is to help you navigate and find things you want done. Give it a shot.
