    I made a big pot of this gumbo yesterday and it was awsome. Made a double batch and canned 11 quarts. Its really great stuff. Thanks for the tip Polar Bear.....

    I just wanted to confirm that this recipe is totally out of bounds. I have made this over 50 times in the last 4 years and it is always a huge hit.

    last fall I decided to start making gumbo. The recipe I used called for 1 lb lump crab. I nearly died from sticker shock when
    I bought it at my local grocery store, The next time and every time since , I have substituted crappie fillets for the lump crab,

    My latest batch had andouille , chicken , crappie and shrimp It was great , if I say so my self. I wait until the very end to
    add the crappie, since it breaks up so easy. My neighbor made crappie cakes ( just use a crab cake recipe and substitute crappie) the same weekend as my last gumbo cook.
    I crumbled up the crappie cakes , covered with gumbo , it was heaven .

    will have to try this one fo sho! love a good gumbo and crappie is always a good and less costly sub for some other ingredients!

    Sounds good, thanks for the tips.
    Will have to give this a try.
    My crappie costs much more than any crabmeat would ever. And sometimes, not as readily available.
