Please do with your Courtbouillion recipe, excellent dish for sure. First time I had it was six years ago at an oilfield golf tournament. Fresh caught shrimp Courtboullion it was. Went to the shop the following week and asked the hands about it. An ole boy from St. Martinville says - "sure I know how to make a tomato gravy". First time I made it after that.
Being from West Texas, it's been fun enjoying all this South Louisiana food. I teach this folks down here how to smoke real Texas BBQ, prepare real chili, tamales, prepare fresh green chilies, etc. Generations have taught me being a farm and ranch hand out west.
