    the fat content on great breakfast sausage is really high , not enough and it will be dry
    not sure as we dont make it , but it for sure is in the 40% range or higher amount to be legendary yummy , we do 20% just on regular ground meat

    As I have been told Boston Butt is about perfect to make sausage from. It will certainly take some tuning to get it correct
