I may have mentioned this before but we used a electric griddle for pancakes about 25 years. One of the ranges in our kitchen, the propane range (we added a gas range after Hurricane Katrina as we were without power for 40+ days cooking on a Coleman Stove outside) came with a huge iron griddle. Well my wife decided to cook pancakes on the iron griddle for a change and instantly I was back in Gattlinburg, Tn eating pancakes at a favorite restaurant. It was the iron that added the unique flavor you just don't get any other way. Ketchn is correct once again (he should be tired of it by now, right?) pan frying in iron is the only way to go.

thanks for the kind words , but we use them mostly due to the ease and simplicity , they do tend to give food a boost in the flavor dept. and to be sure we leave a big one on the big burner with a bacon press and a small one on the small burner. There is a lost art to learning how to cook with one , they will cook for a long time well after you turn off the burner ,,,,tip 1 .....

I can't remember their name anymore, it's been too long since I was there but the taste has stuck in my memory longer than the name. I do remember doing the Gatlinburg Gift Show, staying almost across the street and having to walk up the hill to get to the restaurant from our hotel. Seems waffles was a big deal there too.

Do like to use a iron skillet for frying especially fish. but do use our electric basket one quite a bit at the lake as it is nice to get the fish done quickly and then get the fries in.
