    Default Stuffed Smoked Chicken

did a whole chicken the other day ,about 30 minutes over pecan each side and then a foil wrap for the finish .
wife wanted to stuff carrots , onions ,and potatoes in it like they do where she comes from when they slow cook whole critters .
turned out quite pleasant and will occur again down the road .
the good news is the sides are right inside the bird when its all said and done !

Looks good to me. I’d try that with Turkey too. Yummmmm, a good Turkey is my favorite.

I deboned one then stuffed it. It turned out awesome but it sure was a lot of work getting the bones out of that critter and tying it together to hold the stuffing. Had to watch the YouTube video a couple of times to get it close to right

try slicing some of the left over breast meat up and toss in some onions in slices with bell peppers in slices in a cast iron skillet the next meal and just give them a good searing , some of the best chicken fajitas you ever consumed for sure
