Default First time trying Pickled Crappie

I'm a big fan of Hank Shaw, who has several cookbooks for wild game. His latest book, Hook, Line, and Supper has this recipe in it for Pickled Pike.

I scaled it up 2.5x for 2.5 lbs of Crappie fillets. The pickling solution and brine were each about 50% more than I needed, and there were about 10x as many onions as I needed. You could probably use 1 medium onion for 5 lbs of fillets.

I figured I'd follow it to a T this first time, then make some variations in the next batch, likely adding banana peppers or jalapeños.

I realize there is nothing new under the sun, but this is the first time I've tried pickling anything. I'll find out in about a week if it is any good.

I've done it twice. If I'm remembering correctly, my first attempt was similar to yours with a short brine then right in to the pickle. Edible but not ideal. The 2nd time I used a much longer brine and then in to the pickling solution and I liked that much more. If you find that this first attempt isn't quite what you're looking for, you might look up 330 maniac on youtube and try his version.

I found this thread from last year in which I note where I found the recipe I followed the 2nd time.

Yes, I was talking to myself; sometimes even I have to ask for expert advice.
