We do steaming whole with some chilis and lemon slices or soy sauce.
I have always fried my crappie fillets but would like to try other methods . problem is fried is always spot on and I'm afraid other methods might be hit and miss. what are yaws thoughts?
We broil some of ours. Skin side down on a cookie sheet. Salt, lemon pepper, garlic powder to taste, and onion powder, a few dollops of butter on each fillet, some onion rings on top. Under the broiler for a few minutes, then pig out. I like them fried also, but broiled is a nice change up.
Look back in this Thread for Parmesan Crusted Baked Crappie. I have done it many many times, excellent and healthy. I will try to post the link, not very tech savvy.

I cook mine at 400 for 20 minutes and use a Roasted Garlic and herb seasoning and sprinkle the good Parmesan Shreds on top.

Get some butter hot in an iron skillet. Coat fillets with Old Bay and cook 3-4 minutes on each side. Can eat just like that or make fish tacos.

Just posted about sharing the harvest with friends and very simple and easy cleanup. Saute pan melt tbsp butter and then add olive oil, put in your veggies, mushrooms, shallots/leeks, spinach, peppers whatever you like. minced or smashed garlic for few minutes and then add your fillets. only takes a minute or two for crappie they turn white and your done. quick, easy and you have sauteed veggies to go with your fish and it's a meal. Folks who are squeamish about fried fish really love this one as it looks so gourmet.
