I’ve spatchcocked a chicken and it was good. Never thought about a turkey

I’ve smoked quite a few spatchcock chickens and they’re great. I’ve never tried a turkey

I do my chicken that way... never done a turkey. Will cut your cooking time down.

I like Brined but we also found that most of the turkeys that are frozen are already brined, so is it good to brine the second time

If you have any whole pecans (in da shell) throw them on the fire when you start smoking. The pecans smoke great and give a great taste to the meat.

Put this one on at 8am. Started at 200 degrees for an hour then 300 and put the ham on the rack above.

    Almost ready to come off.
