    No, they are filleted. Rib cage removed too. Scales and skin left on the fillet.

    Love the looks of it!!
    Have you tried it just like that except with the plate setter on the egg for indirect heat??

    Truthfully I probably have my plate setter on the egg when I cooked that. It's usually on there.
