    The seasoning is just a standard grocery store packet of Fish Taco seasoning. I think Old El Paso, it is in a blue packet in the area with the regular taco seasoning. I have also used the Purdommes Blackening seasoning and the Tony Chacheres Cajun seasoning in this manner. Just make sure you do it outside or have a door or window open if you use the screaming hot griddle or pan as there will be smoke! If no access to a griddle or cast iron pan you can do these in the oven. Just season fish as above and place on a broiler pan on top rack and broil on high for a couple of minutes and watch for doneness. Bluegill fillets are the perfect taco size and cook up very fast, but keep their flavor and shape due to being a firmer fillet than Crappie.

    Oops, my mistake I forgot I used a different taco seasoning for this cook, the one pictured came from a local grocery store Food City, but any fish taco seasoning will do. Incidentally, the one pictured will do about 3 cooks as it does not take much to season the fillets, and I normally cook just enough for two people.

    Love Fish Tacos!
    There are thousands of variations of recipes out there. I always used strait from the shaker Tony Chachere's Creole, on the fish. I also used the Ranch dressing mix packet and prepared it with jalapeno's, to taste, in a blender or food processor to cream things together for the sauce. Shreded cabbage. Then the usual suspect's for garnish... Heavenly!
